Jeannette Fischman, as the spliced title suggests, is the Ashkephardic daughter of late parents born in Vienna, Austria & Alexandria, Egypt. She is a retired LAUSD teaching veteran who is highly artistic & a serious foodie who’s passionate about genealogy research and building her family tree. Jeannette has quite a curated spice collection, and she enjoys preparing dishes reflecting several different ethnic traditions. Of her “dual heritage,” she personally finds Sepharic Cuisine infinitely more exotic and exciting than Ashkenazic fare for its flavors that “sing.” From her maternal-side, she comes from a long line of wonderful Sephardi cooks. These salient experiences have resoundingly proven to her the essential and precious links between ancestral awareness, food tradition, and memory.
Food and ancestry go together. Holiday food preparation often features recipes from our grandmothers and great-grandmothers, reflecting the geographic homes of our ancestors. This Zoom cooking lesson focuses on Jeannette’s Sephardic and Ashkenazic families and food traditions. She will demonstrate the necessarily gentle way to handle Filo Dough (Fillo or Phyllo) for the preparation of both Spanakopita and the folding technique for three-corned “Tiropita” or “Borekitas” (small Borekas). The versatility of using either savory or sweet fillings will be discussed along with helpful preparation techniques.
There will be no physical location so the JGSLA Traveling Library and Mentors Corner will NOT be available for this meeting.
